We do Texas and Carolina barbeque. We use premium quality meats that are slow smoked in a custom built offset wood burning smoker. Though we are a food truck (actually a trailer), we operate as a full service kitchen and for every service whatever we can make from scratch, we make from scratch. It takes a long time to make barbeque this way, but we think it is worth it. We do a “sell out” service which means when we open, we go until we run out of food, versus staying open for a set amount of time. We normally have a line when we open all the way until we sell out. We normally sell out of food around the 2 to 3 hour mark after we open, but each service is a little different. We wish we had enough food for every single customer standing in line, but the reality is that because of our size there is a limit to how much food we can prepare for any one service and maintain our quality standards.
